Chicken Wings (the Pop-Pop way)

My grandfather was an engineer by trade and had an excellent collection of recipes full of very specific instructions.   His method for chicken wings is to first bake them at a pretty high heat, then cover in sauce & broil.  The sauce gets all caramelized and crunchy.  It’s a good deal.  This is my sweet and spicy adaptation of his recipe.

Recipe:

Toss wings in 3 parts baking powder to 1 part Old Bay to give them a light, even coating.
Bake at 375° for 20 minutes.  Take the wings out and switch your oven to broil.

Coat one side with BBQ sauce (Sweet Baby Rays is the way to go)

Broil sauce side up for 10 minutes.

Remove wings and repeat on the other side, saucing the other side and broiling for another 10 minutes.

Notes:
•  For whatever reason, the baking powder makes it crunchy.  I know it’s odd, just try it out.
•  If Old Bay & BBQ sauce sounds weird together, just try it.  It ends up sweet and spicy and full of flavor. My recipe partner puts Old Bay on all sorts of things (like cheese quesadillas) and he’s made me a convert.
•  Sweet Baby Rays is a thick, tomato-based BBQ sauce.  Pop-pop would coat in the vinegar based Crystal’s Hot Wing Sauce, and only broiled for 5 minutes on each side.
