Inspired by having 2 sticky bags of leftover marshmallows and by always being disappointed in a PayDay bar. A chewy peanut bar should not be disappointing, but they taste like cardboard and peanuts. These are a much more delicious alternative.
Melt butter (I used about 5 Tbs for my 2 mostly full bags of marshmallows)
Add marshmallows and stir until melted
Add a couple spoonfuls of peanut butter and stir until incorporated
Add ground nuts and stir (I used a cup and a half or so)
Add whole peanuts and stir
Dump into a casserole dish and let cool. Cut into bars once cooled and you’re ready to go.
*quantities depend on the texture you want. I wanted it chewy, so did a lot of ground nuts and fewer whole peanuts.
*I grind the nuts up in a blender to keep on hand in the fridge for various recipes. Usually it’s just whatever mix I’ve got from the pantry – walnuts, peanuts, almonds, cashews. Blend them until ground, but stop once it’s a crumbly, flour-like consistency. If you keep going past that point you’ll end up with butter.
