Kara’s Granola

Ingredients 

2 cups vegetable or canola oil 

1/2 to 1 cup honey (depending on your sweet tooth) 

1 teaspoon vanilla

1 tablespoon cinnamon

1 teaspoon ground ginger 

dash of salt 

1 large container old fashioned oats (42 oz) 

2 cups nuts (chopped) 

2 cups dried fruit (add post baking) 

Process 

  1. pour oil, honey, and spices into a big bowl- whisk to mix
  2. add oats and mix to coat with oil/honey mixture 
  3. add chopped nuts and mix
  4. bake on parchment paper at 325 for 30-40 min (I usually fill 2 cookie sheets with this amount of mixture) 
  5. take out to cool, add dried fruit on top (let it cool without mixing – this lets it clump) 

 

*cooked granola freezes well
