Ingredients
1 head broccoli
1 small bag shredded cheddar
4 eggs
2 cups chickpea flour (aka basan flour aka garbanzo bean flour)
water
How to
- Cut the broccoli into small bits and pieces, microwave with a little water until steamed (not mushy)
- Crack 4 eggs in a mixing bowl and whisk (add a dash of milk if you feel like it)
- Add steamed broccoli, bag of cheddar, 2 cups chickpea flour
- Add water to the mix until it is a thick batter (and the flour chunks are broken up)
- Liberally cover your pan with veg oil, plop and ‘fry’ the batter into pancakes
