Think, fluffy egg-y pancake. Goes well in a breakfast sandwich or eaten plain.
Ingredients:
1 small cabbage (about 3 cups shredded)
1 small onion
6 eggs
1/4 cup flour (my preference: chickpea flour)
Spice to taste (I used a jalapeno, salt, and garlic)
Vegetable oil (for frying)
Instructions:
- In a food processor, blend the cabbage, onion, and spices. Remove the blade. Add in eggs and flour. Mix until ingredients are well blended (should be a thin pancake batter consistency).
- Heat up oil in your pain (you want a thick covering of oil). Then fry the batter like pancakes (about 1/4 cup per cake). Flip once you see the outside edge browning.
- Enjoy!

- Thick tomato slice + avocado
- Dollop of plain Greek yogurt + BBQ sauce
- Shredded cheddar
