Coconut Milk Fudge

1/2 cup peanut butter
1 can full fat coconut milk
5 Tbsp maple syrup
pinch salt
vanilla extract

simmer everything together for 35-45 until the it starts cooking down and becomes a light caramel color

line a casserole dish with parchment paper and freeze for a couple hours (or overnight)

pop out the fudge and cut into cubes. best kept in the freezer.
